So I made some totally awesome cheesy cauliflower pancakes back in college, and I thought I'd try to revive that recipe tonight. Now that I have actual kitchen appliances, I decided to use our handy dandy food processor to make my work easier... EPIC FAIL. End product looked like fried dog vomit. Tasted delicious though :) I was too embarrassed to take a pic lol. I think I need to start a food fail thread.

Squash apple and cheddar soup...
Ingredients
4 tablespoons unsalted butter
1 medium onion, thinly sliced
2 medium apples, thinly sliced
1 large white potato, diced
1 1/2 cups chopped peeled butternut squash, fresh or frozen
1/2 teaspoon dried sage
2 tablespoons all-purpose flour
1/3 cup apple cider
4 cups low-sodium chicken broth
1 cup milk
2 ounces thinly sliced prosciutto, torn into bite-size pieces. Or bacon.
2 cups grated sharp cheddar cheese, plus more for garnish
Salt and pepper to taste
Directions
Melt 4 tablespoons butter in a large pot over medium-low heat and add the onion, apples, potato and squash. Season with salt and pepper and cook until the onion is soft, about 8 minutes. Stir in the sage and flour. Add the cider and cook over high heat, stirring, until thickened. Add the broth and milk, cover and bring to a boil; reduce to a simmer and cook, stirring, until the potato is soft, 8 to 10 minutes.
Meanwhile, pan fry the prosciutto or bacon and cook until crisp. Drain on paper towels.
Add the cheese to the soup and stir over medium-low heat until melted. Puree in a blender in batches until smooth; season with salt and pepper. Garnish with the prosciutto/bacon. Chives might go good with it as well.

I don't like pork either except for bacon. But even bacon, I never really eat often. Once a year or every couple months.
And ham and pork chops are really nasty.

Haha. Yeah, we eat fish- never. I wish we liked it, since it's better for you. But none of us like it at all. Lobster, crab, clams, oysters and shrimp, things like that are good. Heck, my daughter even eats calamari with us. Just no fish.

I had forgotten how much I love grilled cheese. We had grilled cheese with white cheddar, vintage white sharp chedder, and mozerella, little bit of garlic powder. Mmm. Hubby and daughter had ham and bacon in theirs. I'm just a cheese purist. :p

Grilled cheese sounds soo good right now. I make mine with sharp cheddar, a few slivers of red onion, a bit of spicy mustard and a pinch of garlic salt on the outside. Sounds weird, but it totally works. Sometimes I add avocado or cukes too :) Noms

Ugh...i bought the stuff to make the tator tot pie this week, but theres no Johnnys salt around here.....:( i had to get Lawrys. Its not gonna totally be that bad is it? ....wouldnt want the season salt gestapo after me :p

(Don't tell anyone, but I used walmart brand seasoning salt... Came out great!!)

Well, upon further discussion of the Johnnys, it is made locally. So not available everywhere. I can't believe that, lol. If anybody wants some, Pm me and I can get some for you and mail it. :)

Lol totally agree with you! If you know how to cook pork it's heaven. If you don't...it's dry and tasteless. I grew up on a pig farm so needless to say I'm a pork eater ;)

Now I don't know about the sardines, but a well cooked fish and some Oktoberfest or a good apple ale makes for a fine dinner to me!

I love fish too. I'm turned off by the smell of sardines and anchovies tho, so i'd never tried them. I eat tuna out of a can tho. Pickled herring isn't bad either. I can eat some sushi, but not a ton.
Now cooked fish though, i could eat that everyday. Tuna, salmon, or swordfish cooked on the grill mmmmm. I like any white fish too, but prefer that lightly battered and cooked in a frying pan. I love all kinds of shellfish too!
