You can feed him once he has shed if you are going the route of no feed during shed. You can handle him right after his shed, but he may feel a little stressed about the whole process and this being the first time he has gone though it in his new home. So you may want to wait until the day after.
IF he ends up with a partial shed, he will keep trying to get the remainder off. Let him do this for about 24 hours, then go ahead and soak him in warm water for 30 mins, and run him through a damp towel to remove the shed. There is a perfect sticky on this in the husbandry section.
