Babies don't have too much muscle control when they're younger (by the size, I'd say he's still pretty young). Mine used to shake when they were struggling to get their food down... it does look kind of weird, but it's normal. As he grows and gets stronger and developes more muscular control (through handling) he won't "shake" so much.
As far as the striking... sometimes younger ones do that because they're in feeding mode. They sense heat and/or movement and strike. Sometimes mine strike out at the CHE as I take them out for feeding. I wouldn't worry about it.
