I wouldnt be able to put a screw on the probe tho, because if its for a ball python then the heat mat would be damaged by it right?

Just use a shorter 1/4"-3/8" round screw. The pvc is 1/2" thick. The pics shown are an example of how some of us mount the thermometer probe when using a heat mat/flexwatt/UTH/etc
