so in order to avoid this issue in the future, what is a reliable hygrometer to buy?
That is the big question lol.
I just buy a bunch and salt test them to check how accurate they are. Most accurate ones I've got are swell reptiles Hygrometers.
I know alot of people buy AcuRite Hygrometers but there not really easy to come by in the UK but I managed to get one online but it was really rubbish. I assumed I just got a faulty one or something but because of the shipping time and cost I just decided to never use them again.

Do you put the hygrometer in the tub with the eggs? Most hygrometer come with probes (that I've seen), How do you / should You set your hygrometer up to read in your egg box? Do you put one in every egg box?
The Accurite probed thermo/ hygrom is one of the more reliable ones to order off Amazon. Don't settle for the cheaper ones and risk inaccurate temp and humidity readings. I recently used a inferior brand and had to deal with a inaccurate temp reading. One in each egg tub is safer.

This. That way you can monitor the temp/humidity in each egg tub without opening it.
Also if you use the Press n Seal make sure that condensation isn't dripping off of it onto your eggs. An easy way to do that is to make a low point in one corner so any condensation gathers there and then runs down the side of the egg tub.
