As you are in the last stretch you can probably remove the press n seal now and just keep the lids on. At this stage they should probably have more air exchange. It might help with the temps as well.

Thank you rid, I did do that this morning. Hope it helps. Do you think the 91f - 92f surface temp by the ir gun may be accurate for the surface of the eggs?
