There is no Mojave in that picture. It looks like a Normal, a Pastel, and perhaps a Fire. The Pastel Enchi appear to be labeled correctly.

That first picture didn't look like a mojave, but the two in this picture are. Are you sure someone didn't just mislabel that first animal? I don't think desert ghost is a very realistic possibility, as that's a thousand plus dollar morph. As much as we'd like to, we just don't find gems like that at a common pet store. More likely a fire or something like that.

Yes, it's a thing and, no, it's highly unlikely that they move them at night. There are many practices that we certainly wouldn't put in place in our own collections that are standard while an animal is on display for purposes of being sold. The goal of a their business is to make money - not to see their animals into retirement.
