Here's an article that Justin Kobylka wrote earlier this year on his recommendations for a double recessive project. He used Lavender Albino and Pied (to make Dreamsicles). In your case, just substitute Axanthic for Albino and you'll have a ton of pathways you can start on for your Axanthic Piebald project.
