As for my first pairing...the pair were 66% het caramel albino and I hit a visual out of 4 eggs, so those odds are correct. But does that make my breeding pair 100% het since they produced a visual caramel baby for me?

Yes, they are now proven hets. I would say that having them both prove out makes up for your luck on the second pairing.

I agree, I'm excited either way...I'm glad to get at least one visual from 7 eggs and at least more 100% hets now!
