How are the humidity levels? Should be 50-60%. The wheezing is probably just from the shed, but if it doesn't stop it could be a possible RI.
For the behavior, it might just be the snake has not been handled much and is nervous. Maybe try and keep him supported more and stay calm. My boa will do the sidewinder thing if he feels like he could fall.
