That is definitely concerning, but it could have to do with shed. Snakes often yawn to loosen up the skin on their face prior to shedding, and this may cause excess saliva to build up, possibly making slight wheezing sounds. Loose skin in the nasal cavity can also make a wheezing sound when they breathe.

Hopefully the mouth opening / sounds won't persist after he sheds, but if so... Could certainly be a respiratory issue.

Agreed. He's definitley in shed if his eyes are blue. Leave him alone until he's done as he's probably pretty uncomfortable right now. Once he's shed, pay attention to his breathing for a few days. If all seems well, then the sounds you heard were due to his shedding process. I'm reasonably sure this is what's going on. We'll wait to hear how he is next week once he's shed and if its persisting, we'll go from there.

How are the humidity levels? Should be 50-60%. The wheezing is probably just from the shed, but if it doesn't stop it could be a possible RI.
For the behavior, it might just be the snake has not been handled much and is nervous. Maybe try and keep him supported more and stay calm. My boa will do the sidewinder thing if he feels like he could fall.
