Go to your local hospital and visit the maternity ward. Watch how slow and delicate first time parents are when they pick up and handle their brand new babies.... Then watch the older nurses handle those same babies... Lol, even though the older nurses are handling the baby more like a football then something fragile, trust me, it doesn't mean they are not handling them correctly. They have been doing it for decades, and know exactly what they can do with confidence.
Same thing with the guy in the video quickly cutting the eggs with a razor and pulling them out a little to take a peak. No harm, no foul.
