    My favorite recipe is homemade Tortellini Prosciutto, but it's on the complicated side, not to mention a little pricey to make very often.

    My favorite recipe to take to get-togethers is "mac and cheese corn stuff." I have no idea what you would call it, but it's tasty and really easy! I get in trouble if I come to a family/friend pot luck without it.

    Ingredients:
    1 can of corn
    1 can of creamed corn
    1/2 stick of butter (or more )
    1/4 block of Velveeta
    1 cup of elbow mac

    You cut the butter and Velveeta into cubes, put everything in a cake pan, cover it and bake for 45 minutes at 350. Halfway through you need to stir it, and uncover it the last 15 minutes. I usually do a double batch and it fills one of the 9x13 glass pans pretty well. That recipe would probably only be enough for one family.

    Baked Potato Soup

    4 large baking potatoes
    2/3 c. butter
    1/2 c. flour
    2t salt
    1t white pepper
    8 c. whole milk
    1 c. sour cream
    1/4 c. green onion
    1/2 lb bacon
    1 c. shredded cheese


    Bake potatoes 350* for 65-70 minutes. Cool completely and peel. Cut into 1" cubes.

    In a large pot, melt butter, stir in flour, add salt and pepper until smooth. Gradually add milk and bring to a boil. Boil for 2 minutes or until thick. Whisk in sour cream. Stir in green onions, bacon, and potatoes.

    Serve hot with shredded cheese (I like mozzarella) on top

    They get their name from the fact that the marshmallow disapears during cooking leaving the muffin shaped biscuit hollow, but coated with the mallow, sugar, & cinnamon glaze, with a pool of it in the bottom of the biscuit.
    You will hurt yourself eating them.
    Wow this one sounds like an awesome variation of individual little Monkey bread biscuits! I'll have to try this!

    Im pretty sure my mom use to make this too. I love all the different kinds of tortellini and we would make different types all the time. Even seafood tortellini. What kind of sauce do you use? I prefer white alfredo sauces or light greek style olive oil based sauces over the tomato sauces.

    A dessert we use to make but I cant remember exactly how it was done.. I think she called it strawberry dream angelfood cake. Slice the bottom off an angelfood cake and carefully tear out the middle of the cake. Making a hollow about an inch from all the edges. Then put the torn up pieces aside. Make strawberry jellow according to the wigglers recipe and put in the fridge until about half set. Then mix in the torn up cake and allow to set a little longer until a chunky consistency but not wet at all. Fill the inside of the angelfood cake with the jellow mixture and put the bottom back on. Carefully turn the cake right side up on cake plate or flat dinner plate. Use dream whip boxed whipped topping mix to cover the entire cake and top with fresh strawberries. Put in fridge a little longer until the filling is completely set. Slice and enjoy being in heaven

    One of my favorites to make and eat was something really simple I just threw together one night that turned out really good... Balsamic Glazed Chicken over Rice Pilaf... MMMmmmmmmmmmmm... 10 minutes of prep the night before and 10-15 minutes total cook time...

    Start by cutting chicken breasts into strips or chunks, however you prefer. You could probably do these whole too, but I do strips so it cooks fast. After you cut the chicken, throw it in a tupperware or ziploc bag. Add lite balsamic vinaigrette dressing, a little bit of olive oil and fresh minced garlic. No measuring here, just wing it... You can also add onions to the marinade, but I usually don't. Seal your tupperware or ziploc and throw in the fridge to cook the next night.

    I buy the rice pilaf in a box, so it takes about 20 minutes to cook. Get that started before you start cooking the chicken. When I'm ready to do the chicken, I heat up my wok to medium-high heat and add a little PAM (the cooking spray, not the Provent-a-Mite ) You can cook this in any large skillet as well, but I prefer the wok... Pour the chicken and marinade into the wok and cook for 5 minutes or until chicken is done. Pour off any excess liquid and add some more balsamic dressing. Bring it to a boil then reduce heat to simmer for a minute to thicken to a glaze, then serve over a bed of the rice pilaf. Add a side of steamed broccoli or asparagus for a complete meal!

    My favorite thing to make is my Artichoke Jalapeņo Dip. I don't measure anything out though, I just toss it together. Artichoke hearts, pickled jalapeņos, shredded Parmesan cheese, and Mayo. You'll want more artichoke hearts than anything else. Add jalopenos to however spicy you want it. I put the mayo and cheese in last, taste it and then go from there.

    For dinner though, Tuna Casserole! My very favorite!

    I love to cook, even went to college for it.. Most of the stuff I make for myself is throwen together. I dont write alot down. But this one I did. I made it for the wife a few times ( she is a Vegatarian aka VERY picky eater ) and she loves it.



    Roasted Portabello Mushrooms

    2 Portabello mushrooms
    1/8 cup lemon juice
    1/2 Tsp soy sauce
    1 Tsp balsamic vinegar
    pepper to taste

    Mix all 4 ingerdiants and marinate the musrooms for a few hours. Roast in oven on 350 for about 15 mins or so ( thats how long it took me, but it may be different in some area due to elevation) Or you could grill them..

    Serve and Enjoy!

    Im going to have to try this one too. I would eat it with the asparagus but the way I like my asparagus is lightly sauteed (browned) in a skillet with a little cumin sprinkled on it. This was something I tried out of the blue and my dad and I both loved it.

    I cook constantly, I always enjoy it. I like to use really spicy chilies, sometimes dried, sometimes fresh. I also really enjoy fresh avocados. Just plain ones, or all spiced up. On the comfort food side, I made a mean homemade chicken pie!
