Baked Potato Soup

4 large baking potatoes
2/3 c. butter
1/2 c. flour
2t salt
1t white pepper
8 c. whole milk
1 c. sour cream
1/4 c. green onion
1/2 lb bacon
1 c. shredded cheese


Bake potatoes 350* for 65-70 minutes. Cool completely and peel. Cut into 1" cubes.

In a large pot, melt butter, stir in flour, add salt and pepper until smooth. Gradually add milk and bring to a boil. Boil for 2 minutes or until thick. Whisk in sour cream. Stir in green onions, bacon, and potatoes.

Serve hot with shredded cheese (I like mozzarella) on top
