I had the same problem with my incubator when built it with a 110v fan and I changed the fan to a 12V DC fan and connect it with a cel phone charger. Also just in case I connect the fan to a timer and set it 30 min on and 30 off.
That solved the problem and the temps has been steady since then.
I don't know abut the eggs... Maybe some one else can answer that.
