Respectable sellers know that great customer service is just as important and sometimes more important than the value of the animal weather its $1000 animal or a $20 animal. Some times things go wrong, and the buyer protection is there to protect you as the buyer.
Agreed - it is also against Paypal rules to ask someone to do that when making a purchase. Respectable breeders will calculate those fees in the price they charge for the animal. Say I know that I'll be hit for $20 for something I want to sell for $200. I'd price the animal at $225 to cover those fees. Of course, that's an extreme example of a fee, but you get what I mean. :)

They vary based on the plan and volume. Low-volume sellers, which includes just about everyone in the herp hobby, will pay 3-4% if charged per swipe, otherwise there's usually a monthly nut and the transaction fee is 2-3%. A high-volume seller (*cough* WalMart *cough*) pays about 1%.
Oh... and add 2% if you want to accept AmEx.
The gift option aside, the OP sent the last payment back in May and it's now December. So I don't think PP would accept a chargeback anyway due to the timeframe.
