Share your favorite recipes!
Sometimes I like to cook, sometimes I cant stand it. When Im in the mood though, I go all out. The warm weather seems to bring it out. Im lazy in the winter.. Here are a few things I like to make..
~Roast leg of lamb..
I buy a big leg at least 6 lbs or more. Prepare a roasting pan just barely longer than the leg and at least 6 inches high. I pile whole red potatos (skin-on), peeled whole carrots, peeled and quarterd onions in the bottom until the entire surface area is covered. I cut small slits all over the leg and stuff slivers of fresh garlic cloves in each slit. Then put the leg in the pan on top of the veggies. This steams the lamb and the veggies in a way that cant be compared to piling the veggies around a lamb sitting on the bottom of the pan. Sprinkle a visible amount of oregano and a very light sprinkling of whole rosemary. I just use au jus for basting sauce in the bottom. Sometimes I make a greek baste with olive oil and lemon juice instead if I want it to be greek style and tangy. I make enough to cover the bottom of the pan. Cover tightly with well sealed lid or foil and roast about 20 minutes per lb at 325 degrees. Until meat thermometer reads 150 to 165 degrees F at the bone in the center. This is for "medium done" 2 1/2 to 3 1/2 hours :) I dont check it until the very end of the cooking time. If you break the seal the meat is more likely to dry out.
My favorite dessert is ambrosia fruit salad. My mom made it all the time and its extremely easy. Just a large size tub of sour cream. A bag of small marshmallows. A regular size can of madarin oranges drained. Can of pinapple chunks drained and about a cup of bakers coconut. Some people add chopped walnuts, pistachios, Small cubes of jello, raisins or apples. Whatever you want. Just mix it all together in a big fruit bowl and refridgerate. Wow is that stuff creamy and tasty! Needs to be eaten within a couple days or it collects water.

That sounds very good.
I do not cook often, but every now and then I will. My favorite is salmon. I top it with some mayo, dill, oregano, and then bake it. I also make pan-seared jumbo shrimp occasionally. After I thaw them by running then under cold water, I mix them with some old bay seasoning, salt, and a little sugar. I then sear with a little oil on both sides until they are done.

The parmesan crusted chicken on the hellmans jar is sure GOOOD and makes some tasty subs the next day with some sauteeded mushrooms and mozarella..:D

So far my favorite is Alton Brown's stuffed pork chops off of good eats.. those things will make you slap a 2 year old to get to them..

I really like to make barbecued chicken breasts on the grill or steaks now that it is getting warm out. I also like to throw some baked potato and cobs of corn on the grill too!

I love to cook in my crockpot. It's the most productive cooking (IMO) you could ever do...ya throw in your meat, spices, veggies, and a lil water, turn it on low, and go to bed. When you awake the next morning......Voila! a delicious meal you made yourself! I've made everything from creamy curried chicken, pot roast, chili, BBQ pulled pork, etc,. this way. I love curry, and make a really easy curried beef with onions over rice. Also, whenever I go to a party or potluck I make "taco dip". (it's a BIG hit with the guys ;))
Here's the recipe:
1lb ground beef
1/2 onion (finely chopped)
1 pkg cream cheese
1 jar fave salsa (medium or hot)
fresh guacamole (optional)
shredded cheddar
sour cream
Brown the onion in a pan with a little butter. Then add the ground beef and brown it. Keep the heat on med, and add the cream cheese. Stir till completely melted and mixed with the beef and onion. Remove from heat. Add the salsa and guacamole. Stir ingredients till thoroughly mixed. Top with cheddar and a little sour cream. Serve with tortilla chips to dip with!
*note: I would use a good sized pan, cause you'll need the room for all the ingredients.

My all time favorite morning treat is "Hocus Pocus Buns". They take a little prep time but man are they good.
Ingredients
The biscuits that come in the green can, no sleep last night so the name escapes me.
Bag of big marshmallows
melted butter or margarine
a mix of sugar and Cinnamon
Needed to prepare one slightly greased muffin pan, oven preheated to the temp recommended on the biscuit package.
Step one dip marshmallow in the melted butter
Step two roll in the sugar Cinnamon mixture to coat
Step three flatten out one biscuit and place the marshmallow in the center.
Step four fold the biscuit around the marshmallow and seal at the top by pinching together.
Step five dip the top of the biscuit in the butter and then in the sugar mix.
Last place in the pan crimped side up.
Bake until done.
They get their name from the fact that the marshmallow disapears during cooking leaving the muffin shaped biscuit hollow, but coated with the mallow, sugar, & cinnamon glaze, with a pool of it in the bottom of the biscuit.
You will hurt yourself eating them.

Good thread idea!! I have a TON of recipes I love to cook. My mom started me cooking and baking when I was 11. At the time I hated it, but I'm glad she did. I always ate well when I was a bachelor (no frozen meals, etc) and it impresses the hell out of the ladies when you can cook them an amazing meal.
Anyways, here's one of my favorites for making super delicious juicy hamburgers. It may seem weird, but try it, I promise they'll be one of the best homemade burgers you've ever eaten!!
Ingredients:
- 1 lb lean ground beef
- 1 large egg
- Italian bread crumbs
I recommend wearing gloves for this. In a large bowl combine meat, egg, and ~1/2 cup of bread crumbs. Mix them together by hand. Add more bread crumbs and mix until the beef is sort of like a paste in consistency. You want it to still be plenty of moist, but it shouldn't feel very wet; meat should clump together and stay together when pressed. I never have measured out how much bread crumbs I add, always go by feel.
Divide into 4 patties and then grill them how much you like them to be cooked. I personally like to do medium - just a slight tint of pink on the inside. Serve with however you like your burgers.
With this recipe the egg adds a lot of moisture so the burgers don't dry out when they cook, and the italian bread crumbs help hold it together and give a little flavor as well. Enjoy!!

My favorite recipe is homemade Tortellini Prosciutto, but it's on the complicated side, not to mention a little pricey to make very often.
My favorite recipe to take to get-togethers is "mac and cheese corn stuff." I have no idea what you would call it, but it's tasty and really easy! I get in trouble if I come to a family/friend pot luck without it.
Ingredients:
1 can of corn
1 can of creamed corn
1/2 stick of butter (or more :) )
1/4 block of Velveeta
1 cup of elbow mac
You cut the butter and Velveeta into cubes, put everything in a cake pan, cover it and bake for 45 minutes at 350. Halfway through you need to stir it, and uncover it the last 15 minutes. I usually do a double batch and it fills one of the 9x13 glass pans pretty well. That recipe would probably only be enough for one family.

Baked Potato Soup
4 large baking potatoes
2/3 c. butter
1/2 c. flour
2t salt
1t white pepper
8 c. whole milk
1 c. sour cream
1/4 c. green onion
1/2 lb bacon
1 c. shredded cheese
Bake potatoes 350* for 65-70 minutes. Cool completely and peel. Cut into 1" cubes.
In a large pot, melt butter, stir in flour, add salt and pepper until smooth. Gradually add milk and bring to a boil. Boil for 2 minutes or until thick. Whisk in sour cream. Stir in green onions, bacon, and potatoes.
Serve hot with shredded cheese (I like mozzarella) on top :D

Im pretty sure my mom use to make this too. I love all the different kinds of tortellini and we would make different types all the time. Even seafood tortellini. What kind of sauce do you use? I prefer white alfredo sauces or light greek style olive oil based sauces over the tomato sauces.
A dessert we use to make but I cant remember exactly how it was done.. I think she called it strawberry dream angelfood cake. Slice the bottom off an angelfood cake and carefully tear out the middle of the cake. Making a hollow about an inch from all the edges. Then put the torn up pieces aside. Make strawberry jellow according to the wigglers recipe and put in the fridge until about half set. Then mix in the torn up cake and allow to set a little longer until a chunky consistency but not wet at all. Fill the inside of the angelfood cake with the jellow mixture and put the bottom back on. Carefully turn the cake right side up on cake plate or flat dinner plate. Use dream whip boxed whipped topping mix to cover the entire cake and top with fresh strawberries. Put in fridge a little longer until the filling is completely set. Slice and enjoy being in heaven :)

One of my favorites to make and eat was something really simple I just threw together one night that turned out really good... Balsamic Glazed Chicken over Rice Pilaf... MMMmmmmmmmmmmm... 10 minutes of prep the night before and 10-15 minutes total cook time...
Start by cutting chicken breasts into strips or chunks, however you prefer. You could probably do these whole too, but I do strips so it cooks fast. After you cut the chicken, throw it in a tupperware or ziploc bag. Add lite balsamic vinaigrette dressing, a little bit of olive oil and fresh minced garlic. No measuring here, just wing it... You can also add onions to the marinade, but I usually don't. Seal your tupperware or ziploc and throw in the fridge to cook the next night.
I buy the rice pilaf in a box, so it takes about 20 minutes to cook. Get that started before you start cooking the chicken. When I'm ready to do the chicken, I heat up my wok to medium-high heat and add a little PAM (the cooking spray, not the Provent-a-Mite :P ) You can cook this in any large skillet as well, but I prefer the wok... Pour the chicken and marinade into the wok and cook for 5 minutes or until chicken is done. Pour off any excess liquid and add some more balsamic dressing. Bring it to a boil then reduce heat to simmer for a minute to thicken to a glaze, then serve over a bed of the rice pilaf. Add a side of steamed broccoli or asparagus for a complete meal!

My favorite thing to make is my Artichoke Jalapeņo Dip. I don't measure anything out though, I just toss it together. Artichoke hearts, pickled jalapeņos, shredded Parmesan cheese, and Mayo. You'll want more artichoke hearts than anything else. Add jalopenos to however spicy you want it. I put the mayo and cheese in last, taste it and then go from there.
For dinner though, Tuna Casserole! My very favorite!

I love to cook, even went to college for it.. Most of the stuff I make for myself is throwen together. I dont write alot down. But this one I did. I made it for the wife a few times ( she is a Vegatarian aka VERY picky eater ) and she loves it.
Roasted Portabello Mushrooms
2 Portabello mushrooms
1/8 cup lemon juice
1/2 Tsp soy sauce
1 Tsp balsamic vinegar
pepper to taste
Mix all 4 ingerdiants and marinate the musrooms for a few hours. Roast in oven on 350 for about 15 mins or so ( thats how long it took me, but it may be different in some area due to elevation) Or you could grill them..
Serve and Enjoy!

Im going to have to try this one too. I would eat it with the asparagus but the way I like my asparagus is lightly sauteed (browned) in a skillet with a little cumin sprinkled on it. This was something I tried out of the blue and my dad and I both loved it.

I cook constantly, I always enjoy it. I like to use really spicy chilies, sometimes dried, sometimes fresh. I also really enjoy fresh avocados. Just plain ones, or all spiced up. On the comfort food side, I made a mean homemade chicken pie!

One thing I could recommend is this cookbook. It's an awesome cookbook, I carry it around with me just in case I have to wait in line, or when I babysit. One thing about this cookbook though, they're heavy on the onions, so I normally do half the onion the recipe calls for. And I don't use fat free sour cream. Yucky!

They arnt that massive over here, and the betty crocker mix always turns out like a sponge cake.

Hint: use buttermilk in the recipe for brownies. It makes em moist and dense, and delicious!

Also leave out just a couple tablespoons of the water or milk or whatever you use. The thicker the batter the more like brownies they will be. I dont know of any homemade recipes but I have the most luck with the generic brands of the box mix kind. Look on cooks.com This is where I go to look for good recipes.

Ooooo I love cooking! I do it almost every night here. Some of our faves...
Chicken Parm:
It's all in the way you cook the chicken. I marinade my chicken for at least 2 hours. Our new fave marinade is a brown sugar and molasses marinade. Then I dip the chicken in egg and cover with home made bread crumbs made up of whole wheat bread and seasonings (basil, oregeno, and rosemary), that have been lightly toasted. Cook in a pan till done. Put chicken in dish and cover in fave pasta, sauce, and Italian cheeses.

And last but not least.... the best brownie's in the entire WORLD!!!
4 eggs
2 cups sugar
1 cup flour
6 tbsp. coco
2 sticks melted butter
1 Tbsp. vanilla
optional 1 cup pecans or other nuts
Beat eggs and then sift dry ingredients and add to eggs. Add melted better, vanilla, and nuts. Bake in a greased 13x9 inch pan at 325 till desired consistency. I usually bake for 25-30 minutes. We like ours really gooey. :P
I'm so going to have to try some of these things... Especially the lamb and the taco dip!

1 pint heavy cream 1/2 stick butter, 4oz. cream cheese(Philadelphia brand) 1 cup packed grated parmigiana (please no green can) 1 tsp salt 1/2 tea fresh cracked black pepper
Boil water for pasta cook till done
Bring cream, butter and cheese's to a boil stirring till smooth add pepper and salt.
I like this with fresh shrimp or chicken grilled then added. Steamed broccoli florets are nice in there too.
Add a salad and a loaf of bread...mmm:D

Ohhhh fantastic thread! There are several that I could mention, but the one I think I've made the most is my favourite comfort food: rice pudding!
Creamy Rice Pudding
Prep Time: 25 Minutes * Cook Time: 20 Minutes * Ready In: 45 Minutes (approximately)
Ingredients:
* 1 1/2 cups water
* 3/4 cup uncooked white rice (I like short grain, medium is also acceptable. Long grain not recommended.)
* 1 1/2 & 1/2 cups milk
* 1/3 cup white sugar
* 1/8 & 1/4 teaspoon salt
* 1 egg, beaten
* 2/3 cup golden raisins (optional)
* 1 tablespoon butter
* 1/4 & 1/2 teaspoon vanilla extract
Steps:
1) Wash rice in cold water until water turns mostly clear, usually 3-5 times. (This removed excess starch which will keep the pudding creamy, not hard.)
2) In a medium saucepan, bring 1 1/2 cups water to a boil. Add rice and 1/8 salt, stir. Reduce heat, cover and simmer (minimum heat) for 20 minutes.
3) Add 1 1/2 cups milk, sugar, 1/4 salt and 1/4 vanilla extract. Cook over medium heat until thick and creamy, about 15-20 minutes. Stir in remaining 1/2 cup milk, beaten egg and raisins. Cook 2 minutes more, stirring constantly. Remove from heat, and stir in butter and 1/2 teaspoon vanilla. Serve warm.
NOTE:
* This recipe may be made using Splenda instead of sugar. Use 1/3 the amount. This is an easy way to enjoy this creamy rice pudding but cut down on the sugar and calories.
* If desired, prior to serving, add a dash of ground cinnamon or a small pinch of nutmeg to each bowl for flavour.

Okay I never wrote this out before. I am used to eyeballing it. It's my secret star to my summer BBQ's.
Seru's Death Sauce
Two diced Jalapeno
One Diced Poblano
Five minced cloves of Garlic
One cup of minced onion (red or white)
1 tablespoon of grated ginger root
Half a Bottle of Good quality soy Sauce
3 Table Spoons of Sriacha
1 table spoon of texas pete
1 tsp each
Mustard
Red pepper
Fresh Cracked black pepper corns
Minced Cliantro
Cinnamon
Add vegetables to hot sauce pot and sweat until soft and faded.
Add soy sauce, Sriacha, and texas pete. bring to a soft boil and reduce heat immediatly.
Stir in ginger And spices.
Simmer for an hour to 2 hrs.
Serve.
Excellent for Red meat, best as a basting sauce as it is thin.

Made this the other night. My new favorite.
TORTILLA SOUP
4-Tbs. Oil
I-medium onion chopped
4-large cloves garlic roughly chopped
2-jalapenos, seeded sliced
1 Tbs. dried oregano
I-tsp. Cumin
1-28 oz. Can chopped tomatoes
3-cups shredded chicken
few dashes Worcestershire sauce
3-4 cups chicken stock
I-lime
I-cup cooked rice
sour cream, avocado and cilantro for garnish
Heat oil over medium heat add chopped onion,
saute for 1-2 min. Add garlic and jalapeno
sweat until soft and translucent. Add spice and
cook 1-2 min until fragrant. Add tomatoes,
chicken, Worcestershire sauce and stock, Bring
to simmer and cook 20 min. Cut lime in 1/2
squeeze lime juice and add lime halves. (remove
limes if you have leftovers)
put 1/2 cup of rice in the bottom of a bowl,
ladle soup on top and garnish.
I added a bit of cayenne pepper for an extra kick.
I have a few dessert recipes that are great too but they are family secrets lol ;)

Heres a little thing I like to do with that leftover salmon.
Salmon Cakes
1 filet Salmon cooked
about 1/2 cup Hellmans
about a dozen sweet or bread and butter pickle slices, and a couple Tbs. juice
1 sm. onion
a couple cloves of garlic
some of your favorite spices(I use salt, pepper, curry, and paprika or smoked paprika. Maybe a little old bay.)
1 egg
about 6 or 8 Ritz Crackers or 1/2cup breadcrums.
As I'm sure you all noticed I'm a stickler for the measuring thing too. Mince the onion and the pickle chips. Mix them in a bowl with the salmon, spices and Hellmans. I do like to add a couple Tbs whipped philly cream cheese, gives a nice Texture. Toss in the egg and mix. Add Ritz to bring it together, however, remember if its too dry the finished product falls apart. Form the mixture into patties and pan fry in a thin layer of light oil or butter.

These sound great simple is sometimes better. I don't eat alot of red meat so if there are any others who look to the lighter side of ground meats...
Not so Turkey, Turkey Burgers(I can't stand a burger that tastes like Thanksgiving leftovers.)
1lb Ground Turkey
1 sm Bell Pepper(Green or Colored)
1 sm or 1/2 med Onion
3-5 cloves garlic
W sauce
italian seasoning
smoked peprika
salt and pepper
Mince the bell pepper, onion, garlic(very small) Mix veggies with ground turkey, shake in some W sauce and spices. sometimes I'll use some breadcrums if the mixture is too wet.
This takes a little to prepare so I usually do it in bulk and freeze the burgers in Ziplocks sepparated by wax paper.
I've got a couple others but its late, and this is getting to be a long post g'night all. :)
