Re: Which thermostat?
I've only tried Spyder Robotics, but so saying I loved my first one so much I now have two.

Spyder Robotics. Why? Let's take the VE 300x2 vs the herpstat 2
Both are extremely similar in features. They offer two probes and two controlled outlets. They both offer safety shutoff and proportional heating. They both offer alarm warnings. They both offer night temp drop options.
Now from my research since I now own a herpstat 2, is that the herpstat can offer on/off, pulse, and dimming as heat options, humidity control ($55 optional probe required and takes a probe plug slot), or lighting timer control. The VE 300x2 does not offer dimming as far as I can tell.
These may be small but to me they were a very nice added option, especially the pulse versus dimming proportional control.
In reality they are very good products and either will serve you well.
So this really isn't a lot to compel why herpstat but... right now they are offering the herpstat redline series on sale (1 and 2) which means it is cheaper than a comparable VE product, especially if you get the herpstat 2
I recommend either the herpstat 2 or ve 300x2 if you have one enclosure with two heat sources so you can independently control and monitor the temp zone of each of them. Of course a tub with a sole heat source or a rack with one heat strip or identical heat strips might just need the single probe models so a herpstat 1 or ve 300 might do.
If you do go with the herpstat models, upgrade when you order it, to the metal probes for $1 per probe

Have VE200 that have been running great since they introduced them.
Using on my racks and incubator......
Also have an old Helix that is still going strong for close to a decade now.

I'll only be needing one port since I'll be running a RHP and from talking to pro products about it he said that's all I'll need. I do keep debating if I should get two ports just in case I needed another heating source, or if I get another snake lol
Are there any differences besides looks of the redline vs normal
Herpstat?

Just the look. redline has red lighting and red plastic housing. The only benefit is it's on a really great sale right now for the herpstat 2 especially.
Here is someone's picture from on this forum of what a redline looks like

I personally regret not getting a two-output thermostat, so I would definitely recommend the Herpstat2 if you're thinking about going that way.

Re: Which thermostat?
I have both brands, preference is for the Herpstats, but I have no plans to replace the VEs unless/until it becomes necessary. I second Starscream's suggestion to get the Herpstat2, IIRC the price difference for the second output is small, and you've got it if you need to add a second heat source or use it for controlling cooling, lighting, or humidity.

I really like the VE 200. I haven't used the others that were mentioned so I can't comment, but they do come highly recommended.
