Would placing desiccant packets into freezer bags with the rodents maybe help in preventing freezer burn, since (I think) that comes from water vapor in the air?

the opposite! freezer burn happens when the meat becomes super dehydrated due to the freezing temps taking all the moisture out of the air and the meat.
freezer burn is not a concern as long as it is gone once thawed.
The best protection from freezer burn is to seal up the rats tight tight tight. Those 'food saver' vacuum seal machines are the best. Tttaylorr is correct freezer burn is caused by severe dehydration.
I sort my prey into small ziplock bags of 3-5 mice/rats per bag. Then put those in gallon ziplocks. This way I'm only opening what I need a few at a time, the rest remain air tight. Never had freezer burn

Yep... picked up Ziploc GALLON Freezer bags, and QUART freezer bags. Will try it this way as well.
