Pulled Pork.. Beef Brisket?
Is anyone else here a fanatic about bar-b-q besides myself? 
I have been cooking three boston butts weighing a total of 14lbs for almost 17 hours now. There is little else that can hold my attention for that long. I think that the best part is that when these finish up (in the next two hours) I get to throw a 12lb beef brisket on my smoker. My father-in-law has been planning this party for a few months now. The brisket will probably take about 24 hours to cook.. but it will melt in your mouth..
I've been doing this for a few years now and am investing in a 8ft barrel smoker on a trailer so I can never have an excuse not to smoke something! I cook my butts to about 210*... I can literally pull it apart with barely any force at all.. you just look at it.. It should be illegal... I'm just glad that my wife doesn't get jealous!

Being from the South...I love BB-Q ribs and pulled pork are my fovorite.

One thing that I miss about NC and the "country" was all the oil barrel smokers in back yards and smoking an entire pig - those were some GOOD eats! Nothing quite beats pulled pork - you don't even need to add bbq sauce! Ohh, and the cracklin skins - mmmmmm!!!!!
What time is this party? And can we come?

So we have this thing called the BBQ Cook Off in houston prior to the Houston Live Stock and Rodeo kicks off. Lets' see, ummmm, I predict I will have the fat happies for the next week or so. lol That is going to be some "Good Times" sampling plates... Mmmm Mmmm Mmmm
Now where is that slim fast?????

I love visiting my southern kin and eating some genuine BBQ...

i will say this:
half my book collection is biology and reptile related...
the other half, is BBQ baby!! love it... Steve Raichlen is my hero.
i'm really into southeast asian grilling lately, but boston butt with some carolina vinegar sauce will always be my favorite!

I love smoking! Whether it's ribs, brisket, pork chops, or butt's. I don't do chicken though, never been a fan of smoked chicken.
I also just like pairing up the right wood with the right meat to get the flavors I'm looking for, like pecan, cherry, or my personal favorite apple from my very own apple tree.
