Is your current setup the same as the one pictured in your gallery? If so I would suggest a few quick changes:
1. Put another hide in there, and put the water bowl in the middle.
2. Cover 3 sides with dark paper, foam board, or paint them.
3. fill the tank with some fake plants or something to make her feel more secure.

Is she still eating regularly? I think her moodiness will just pass when she feels more comfortable. She is probably sick of getting shots! What you are describing doesn't sound like her RI is getting worse, it just sounds like she is in a bad mood.
