My snake does the same exact thing as yours during a shed; express interest, tongue flick a lot, even go right up to the mouse and "nuzzle" it, but in the end she seems unsure of what to do/what the thing I'm dangling in front of her is. So I give it a couple more blasts from a hair dryer and she nails it every time.

Making sure the rodent is extra warm may give her the confidence she needs as she is blind as a bat right now but waiting to feed after the shed certainly won't harm her.
