Yeah i agree you probably just spooked him, or maybe he is coming up on a shed. I have noticed that most of mine get a lil grumpy around that time.

Okay you got this snake back in August if memory serves. When you say "hopper" I assume you mean a hopper mouse. It may be that the snake has grown and is now ready for two hoppers per week or 1 single mouse slightly bigger, say a young adult mouse once per week. Only you can judge if his/her growth has warrangted a move up but most likely it has.
All snakes hiss. They might not hiss everytime, they might not hiss hardly ever but every snake has the capacity to hiss. You may have startled the snake, it may have been sleeping or is going into shed or is hungry or is just....being a snake. I wouldn't be concerned particularily over the occasional hiss or even a strike, these are not domesticated pets.
As far as the climbing does he/she do this all the time or just occasionally in the evening hours? If you are sure you are providing the right temps on both sides, have secure hides and the snake is not constantly being disturbed then it's likely just being a snake. If it's constantly roaming and searching when it should normally be sleeping during the daylight hours, then you likely have a problem with your enclosure and need to attend to that.

He hasn't shed yet as in lately or never since you got him back in August?
