Is it an analogue (a little dial) or digital meter? The stick on dials and strips are notoriously inaccurate.
A humidity spike can come from something as simple as water getting splashed on the meter, or the snake peeing near it. And temporary spikes in the humidity (say from ambient weather going on outside) aren't going to hurt the snake...so long as the humidity isn't excessivly high for weeks on end....and so long as the substrate and such stays dry.
Increased ventilation is the best way to help bring humidity down. A fan blowing in the area (without blowing directly on the cage) can help a lot.
