It's hard to say, rats are generally allowed to breed indiscrimately so you never know with pet store ones what will pop out. All I can tell you is what I get from mine. My big male black and white hooded bred to a ruby eyed beige (fawn) generally produces a lot of black berkshires or self blacks with a tiny chest spot or strip (not really enough to be classed an english or irish). He throws a lot of albino's to bred to almost every other color female. I get a fair few hoodeds as well, some are quite nicely marked, some are very broken stripes.
I agree...I would hate to have to do a gant chart for rats talk about an eye chart.
