Since it's been a while since I posted, I just thought I'd shoot out an update for whoever cares to read it. Dr. Jones, whom I got in November (and publicly worried about in another thread), seems to be doing pretty well. She's now shed twice since I got her, and she's only missed one feeding.
The one time was actually Christmas day-- she was clearly interested in dinner. I put it under the CHE to warm it up and get the scent going and, as usual, she went nutty looking for it. She quickly struck and constricted when I offered it to her, then went to her hide, left the mouse outside the opening, poked her head out, and sat there. I was thinking maybe it wasn't warmed up enough for her, so I reached in (with tongs--she gets a bit snippy at dinner time) and removed the mouse. I wiped off the substrate (which is now coconut husk rather than astroturf), warmed it back up again, and she repeated the process. I don't know if it was something about the mouse or if she was saving it for later. Since I had to leave, and didn't want to leave a dead mouse in a heated box for a few days, I decided she missed her chance and took it back out. She ate with no fuss when I offered again a few days later.
She's since done this sort of thing a couple more times since, but wolfed it down on the second or third try. She doesn't seem at all bored at the prospect of hunting, just doesn't feel like finishing dinner. I don't know if it's lighting conditions, me being around, or what, but when she does this, I'll turn out the lights and switch to headphones after she constricts and she usually gobbles it up. So I guess either she's shy or just really enjoys the hunting and killing 
She's also popped her mousy dinner twice now. Extra juicy. Doesn't seem to bother her, though. Luckily she's eaten it both times that's happened and I haven't had to scoop mouse gore out of her tank.
Also, she's not the most active of pets. She's usually just in her hide all day (at least while I'm awake). But she does often poke her head out to watch me when I'm in nearby. Also, when I handle her, she's not particularly defensive, just not very active. She'll check out her surroundings looking in pretty much every direction, but doesn't really move around much while I'm holding her.
So, overall, it seems like she's healthy but has a few quirks with eating and is kinda lazy. I take this to mean she's fine and this is just the way she works. So yeah, long story short, things seem to be going pretty well
