Experiment around. There really is no "right" way to do it. Do what works for you.

Yeppers....if U put the unit on the cool side, then the ambient temp is the top number and it's the 82-84*. String the probe & stick it somewhere over the area of the UTH. < I > personally then put the waterproof aluminum tape over it to keep it secure, b/c all my snakes like to burrow and a couple of them would pop it off the bottom of the tub or tank and then the temp wasn't correct. The 2nd number is now your hot temp and should be 92-94*
The bottom is the % relative humidity and should be around 50-60%. After any adjustment or misting-type change, give your thermometer to stabilize to get an accurate reading of the change you did.
