I need your best casserole recipe(s)...
My cookbooks have a distinct lack of good casserole recipes. I like making big honking casseroles to cut up and pack as lunches for Rick and I, but I'm getting really bored with my lasagna and chicken enchilada casserole (both kick butt, but we need some variety).
So, calling all cooks, gimme your best casserole recipe(s), perferably something that I can make in vast quanities and can "F/T"! =D

1.0 sunglow motley corn (Jenson), 1.0 albino burmese (Lourdes)
1.0 cat (Nicky), some mooses and ratters, 1.0 hubby (Rick)

Pesto~
1 pkg rotini pasta
1 bottle of pre-made pesto (basil)
mushroom stems/pieces (as much as you want)
1 can of stewed italian tomatos... (the ones w/ italian spices)
Cook and drain the pasta, add pesto and mushrooms and you are set. You can also add chicken to this!
Let me pull out my cook books, and see what I got in there! I got lots and lots of stuff!

To kick this off, my recipe for chicky enchilada casserole (fyi, I'm a "some, grab a handful" measurer, so avoid this recipe if that drives you nuts):
makes 2 to 2.5 big casserole dishes
1 whole cut up chicken or several chicken breasts or whatever chicken you've got laying around
2 big cans of green enchilada/chile sauce (I try to get "hot", but I can rarely find it, so usually get "medium")
1 big can of green chiles (pre-cooked is easier than raw)
1 big can of black beans
2 packages of large flour toritillas
2 big bags of pre-shredded cheese (my grocery carries "Mexican mix" shredded cheese, but use whatever you've got. I use quite a bit but you will have a bit left over. Use less if you like.)
For the yummiest chicken, throw the uncooked chicken into a crock pot with one full can of the green chile sauce and let it cook for a while (um...5 hours? something like that...). When the chicken is done, take it out and use two forks to shred it.
Drain and rinse the beans to get the bean juice goop out.
Grab a tortilla. Put some chicken in, then one chile, a large spoonful of beans, a medium handful of cheese and then pour some green chile sauce (I usually combine the 2nd can of green chile sauce in with the leftover chile sauce in the crockpot and pour it on using a pyrex measuring cup) on top. Roll it up and place in the casserole (I actually combine it right in the casserole dish so nothing falls out). Repeat until you have filled the casserole up with little burrito things of chicky chile yumminess.
Repeat in the second and if need be third casserole dish.
Heavily sprinkle cheese on top of the chicky burrito/enchilada things and pour the remainder green chile sauce on top of that. Bake at like 350 until the cheese is melted and browned up a bit (45 minutes-ish). NUM!

Taco Salad Casserole
This is not gonna tell ya how much to use, just what to use, and you can decide how much.
Using a casserole pan, spread refried beans about an inch thick or so, then top with meat (chicken, hamburger, etc.), then top with shredded cheese (mexican style) and top with gaucamole (if you like it) and then sour cream. This dish is best served very very cold. We always use to scoop it into bowls and eat white or yellow corn tortilla chips with it. (My mom use to make this alot when we went camping)

not a casserole, but a killer smoothie recipe:
1 tub of plain fat free yogurt
1 handful of strawberries
1 handful of sliced peaches
1 handful of sliced, seeded watermelon
2 bananas
1/2lb of crested gecko diet
200 fat wax worms
place all ingredients into blender. fill leftover blender space with ice. blend well, adding ice as needed for consistency. pour into small deli cups and garnish with a cricket.

OMG! Too funny! I was going, yeah...ok..uhuh..yeah ok..till I got to the crested gecko diet and wax worms!
