She may well have eaten a week ago but in that time she's obviously been shipped and then settled into a new enclosure in your house so quite possibly she's just not feeling safe/secure enough to eat quite yet.
If she's healthy and has been eating well it certainly shouldn't hurt her to miss a meal one week and I'd think far better to let her have another week to settle in properly then offer her the prey she is used to getting in the manner she is used to having it offered.
Best of luck getting her eating well for you. They do teach us patience LOL!
