So I could run one thermostat on the two bigger enclosures with 12x8 UTHs, and another one on 4 smaller ones, as long as the wattage is the same? Run a power strip to the thermostat and plug the UTHs into that?

Yes, just make sure the probe is secured firmly and the brand of the UTHs is the same (to eliminate variability) for each thermostat.
