There's a good chance just missing him out at night. My one female will cruise no matter when, my other two usually not much until a bit after lights out. But I don't always catch them. Could just be happy and comfy enjoying his safe spot.

The thing is I sleep at 3 am and I never see him out I see him poke his head out but that’s it and he always comes out morning or at around 4-6 pm it’s weird he will then go back into his hide and never come out

Today is feeding day and I haven’t fed him for two weeks cuz he was acclimating and I was told to skip I also feel like a fuzzy mouse is to small for him but it’s all I have right now so idk what to do

Looks like he's big enough to handle rats. As for the schedule they'll do their thing. As long as starts feeding well and he's not nervously cruising the enclosure nonstop I wouldn't stress it.

Weight is the best/easiest way to go on for feeding. But a small fuzzy rat shouldn't be a problem.
That said if he hadn't feed yet then feed what he's used to in order to make sure he's happy and feeding in his new home.

What's his heat source and temps? I would also make sure you have similar hides on both the hot and cool side of his tank so he can regulate temps as needed.

UTH and I have it connected to a thermostat temps are at 83-88 they aren’t the same size hides but they look fairly similar and they gave me a rat pinkie to feed him when I got him but I feel like it’s to small and he’d still be hungry when should I feed him again I have a rat pinkie and I think a mouse fuzzy

Should I feed in our out of cage?

I didn't notice the cool hide at first.
I always feed in cage, this won't lead to an agressive BP, it keeps them in their comfy space.
I would personally try to acquire some rat fuzzies, and finding a breeder in your area for feeders will be a huge bonus as he grows.
