Thermostat probe beneath substrate for heating mat
This is an accident waiting to happen, a thermostat probe should not be in the enclosure where it can be dislodged, cool down with water spillage or urine (All of which would make the temps shoot up)

For the rest buy a heat gun and take daily readings.
