In my experience I see condensation on the glass when the humidity gets in the high 80s to low 90s.
Having said that, high humidity and heat CAN be a combination for bacteria. So when when it gets that high I either bring out the fan and open the doors to the enclosure or I just change the substrate.
I use this Model with built in probe sensor and it seems to be good within a few points. Cost $10-12 on Amazon.
The downside is that the sensor(s) get ruined if the snake messes directly on it.
