If she's still eating and hiding during the day, I wouldn't worry much either, even though it is odd that she's being active again on the day that she ate.

One of my males did something similar last fall, and it lasted for 3 weeks! He just abruptly became extremely active all night and even part of the day, despite nothing changing in his enclosure or husbandry. I tried switching him to a smaller basic tub, and he was still active, I switched him to a bigger tub, he was still active. Nothing fixed it, but he eventually stopped and went back to normal for no apparent reason.
