That's a cool snake! One small mouse per week for a two year old? That doesn't seem hardly enough at all. She should be on small or medium rats. I bet she can eat 3-4 jumbo XL mice per week. Do you have any way to weigh her? She is probably pacing the cage because she is hungry.
My Australian Woma python went on a feeding strike after I got him because he was all beat up in the mail, was really mean and then became really friendly after about four months but still refused to eat. I finally got him to eat live rat pups, it was the only thing he would eat. They were about the size of a small mouse even though he was 1400 grams. He ate one twice a week, hardly enough for a big boy like that. I finally got him to eat his first small rat this week, it was the size of his thickest part of his belly. This is the first time since I've had him that he actually stopped pacing his enclosure, I'm pretty sure he just wasn't getting enough food. You should be feeding a rodent as big around as the thickest part of your snake. Sometimes they won't take big rats like that and you have to feed several jumbo mice.
I have a 500 gram ball python that was starved when I got him, they were giving him a mouse fuzzy once a month and it looked almost like a hatchling BP even though it was a year old. Now at 500 grams he will eat 3-4 jumbo XL mice in one sitting. This week I just changed him over to small rats that I got from Rodentpro.com, I'd say one small rat is probably the same as 3-4 jumbo mice.
If I were you I'd try to feed 3 jumbo mice per week and see how he does. If he will take it then I'd order from an online rodent place, the shipping will cost you about $30 or so but for $100 total you'll get a bunch of mice much cheaper than any local store. I think the last jumbo mice I got were 0.69 cents each.
