I have used different substrates (not actual sand) my latest is sani-chips (chipped sanitized aspen used in lab cages).. and I like it the best, I also used walnut hull bedding in the past (similar in texture to sand). In any case, I have fed in the tank with different substrates and had no issues. I know some breeders use sand-blasting sand and feed in tubs, so you shouldn't have any problems.
You can give him/her something to hide under and you may even see some climbing. Back when I had mine in 10gl tanks, I had one female in particular that would try to climb the probe cord on her thermometer every night.
