You're correct in everything you're saying. I'd say shoot for the albino het pied male from the beginning. This way you have the chance of visual pied het Albino females being born. You still have to wait a few years to grow those but it'll save you some time in the long run when you don't have to shoot for the very slim double het to double het odds.
