That exact same thing happened when we got our first, too...week of chilling/de-stressing, took her out for food and she was in blues, ate perfectly anyway, and then couldn't touch her for a while until she'd digested and shed. It's torture!

Both of mine shed roughly the same time period too...i figured as much since they both eat the same day each week.

#ShedWatch is finally over!
Yesterday afternoon noticed the snake sticking head out of hide, so I decided it would be a good time to take him out of enclosure for a few minutes. He seemed okay being handled and looking around the room and soon I let him slide back into the terrarium.
This morning I checked in on him, and was greeted with a pungent aroma and the sight of a big ol' snake turd in the water bowl. So that was a relief - for both of us. 
Also saw some some shards of shed skin around the water bowl.
So later today I'm going to bring him out again, check him over and maybe give him a soak if, as I suspect, there's shed still stuck to him. Will also be a good opportunity to clean the tank and put in fresh coconut husk.
This forum is great, I don't know what I'd do without all the advice and information available for us new BP owners.

I have never had a problem holding any of my snakes when they are in a shed cycle

I leave mine alone when they're in shed as they're usually pretty grumpy... but with 60+ in the house I can usually find one to fool with that isn't either in shed or digesting.

We hold ours all the time except a few hours before feeding, about 36 hours after feeding, and a couple days before they shed. They are all held from day 1 without any problems though... I don't wait for them to get acclimated to sitting in a box. lol

A pink belly can be a pretty early sign of shed. I really wouldn't worry about holding your baby at that point.
When mine go blue I leave them alone.
Also also wait at least 12 hours until any handling AT ALL after feeding, but never less; I try for 24 hours, especially if it's one of my more uptight snakes. By that I mean brief handling, like to do cage maintenance or something. After 24 hours you should be fine with short handlings. I try to wait about 48 hours to handle for longer periods after feeding. I also leave them alone the day of feeding, before I've actually fed them.

My little boy has no issue with me holding him during shed, not even if he's blue. I'm always a little extra careful, make sure he knows where my hands are, and make sure to be really gentle. The in store ball python at the pet store I volunteer at is also really easygoing during shed. I think it's definitely something you can acclimatize them to.
