Leaving her alone for long enough for her to settle into her new home, at least a week would be good. I wouldn't worry too much about her refusing to eat, ball pythons have been known to go off food for extended periods of time for no apparent reason.

As far as the striking or posturing, the common thought among owners seems to be: "Get bit and get it over with." From a snake under a year old, a bite won't hurt hardly at all. The fear of being bitten is what will get to you and make handling your snake stressful for the both of you.
