The key difference is level of contrast. Charcoals are low-contrast snakes. The saddle color and ground color are much more similar than the stark dark-light of a young anery.
For example, this is one of last year's charcoal hatchlings at 6 months old.

As with every rule, there are always exceptions! 
But in general I've found eyes to be much more reliable than the yellow.

All of my charcoal/charcoal-based morphs have yellow. The only difference I see in that is the shade of yellow. Charcoal is usually a lemony/pastel yellow and aneries tend to have a stronger, more mustard yellow. But that can be subjective. I look for the contrast; that's something that you can't mistake at all especially in hatchlings.

He definitely has a huge contrast in his eyes, they're cute. I keep saying he... is there really any way to sex without probing? I know it's different than sexing a ball or a boa.
