Hypo enchi looks great. Every single one I have seen is stunning. I have seen them produced from hypos that were not reduced at all and they were still extremely stunning animals. Pumpkin pieds are also beautiful and great for many things. By producing just those 2 you could then go for a hypo pied enchi yb which I thing would be out of this world. Add the lesser bee and pastel calico for other combos with the recessive traits and the possibilities are all awesome.
