Cervical Dislocation: Breaking the neck.
Put your rodent onto a flat surface, such as a table or counter. You can use something like screwdriver or stick to put behind it's neck. Push the rodent into the table with the screwdriver behind it's neck with one hand and hold onto it's tail with the other hand. Pull on the base of the tail until you feel/hear the vertebrae pop several times and the rat is dead. It takes like 2 seconds.

Be sure to apply determined, constant pressure to the tail while pressing down firmly with the screwdriver; it shouldn't be a jerking pull, but a strong even one.
Alternatively a CO2 tank (like used for welding) can be used to humanely asphyxiate them

If the animal is dead there shouldn't be a need for removing the brain….its not going to turn into a zombie or anything

Oooooooooh, that's a horse of a different color. You don't need to take out the brain, you just need to expose it, a small nail and a hammer will do the trick.
There are also other methods for getting a picky eater started. Do a search for picky eaters, and you'll have more threads than you can read in a day LOL

I use a very sharp, thin knife. There's a soft spot right where the head connects to the neck. I bend the head forward and slip the knife in right at the back of the skull, and up. If you find the right spot it doesn't take too much force and doesn't make a big mess. But honestly, I think there are better ways to get picky eaters to eat. Good luck!
( Pinching the nose is also supposed to create an appealing scent, and doesn't make any mess)
EDIT: This is a really dark sounding post! Lol!

Re: How to brain a rat
Take it by the hips, go to the counter, hold it firmly in the hind legs, and hit its head very hard on the counter
