Possible logo
I'm developing a logo and then a website. I'm thinking of this but possibly changing the F and X to stand out more with black letters and red for the F and DNA symbol in red. What do you think?

There's a lot of info there, I would consider making it all one solid color, including the helix. Also I'm not sure if it's the photo but the F appears to be at a different angle than the rest of the font. Good concept though.

I like the helix as a different color than the rest of the wording but would play around with colors more so it pops.

Uppercase would match the F more but the lowercase could be cool too

You've got a lot going on there, so I would try to simplify to make the whole presentation more coherent. Right now you've got three focal points: the eye is drawn to the red F, the helix, and the snake S. Try to have just one focal point. You also want it to be easy to read, but the second word takes work to figure out what it's saying (even if it only takes a second, a second is too long). It has one missing letter and two stylized letters, and the two stylized letters are stylized in different ways.
I think the stylized snake S is the best asset you've got. It works great. It's not super clear that the helix is a helix (more clear in the first version, less clear in the second red version). So if I were you I'd make the snake S my focal point and go from there. But if you're really keen on the helix, I would focus on that and make the snake S a normal S.
So I would do one of two things:
1. Make the snake S the focal point: I would make the F the same color as the rest of your letters. Get rid of the helix (even though it's clever) and make it a normal X. Keep the stylized snake S and you can play with its color. You can also play with having an E at the beginning or not. But keep in mind that getting rid of the E and starting with the X adds more complexity (it's less letters but people aren't used to reading the word "Xotics" so they may get tripped up, even if only for a fraction of a second).
2. Make the helix the focal point: I would make the F the same color as the rest of your letters. Make the snake S a normal S. For this to really work though it needs to be clear that the helix is a helix. So I would go back to something like the first version, where the two tones make it more evident that it's actually a helix. It's harder to know what it is in the second version where it's all one color. In this option I'd probably leave the E off so that the Helix is the first letter. I'd also change the slant of the Helix so that it's consistent with the rest of the letters. Your letters slant right while the helix appears to slant left, so it looks a little disjointed.
I'd also do some thinking about where your operation is competing, because that could give you some insight about whether to focus on the S or the X as your focal point. Having the helix as the focal point of your brand sends the signal that you're really innovating on the genetics. Is that the case? Or are you producing high quality morphs, but they're not quite cutting edge genetically? If that's the case, I might go with the snake S, because then you're sending a signal that's more consistent with your actual operation.

I wouldn't highlight the F. I'd keep it all the same size font. Just highlight the X and get rid of the snake.
There is way too much going on.
Eventually if you become well known enough you can eliminate everything and keep just the "X" part as your logo.
