It is kinda surprising that she actually eats with all that stuck shed on her. Keep us posted, please.
I know, I really didn't expect her to eat. But she didn't hesitate in taking it, so hopefully like The Serpent Merchant said, she'll settle in and start putting weight on. Is it possible that the stuck shed will come off when she sheds again?

It should. Ideally a BP will shed in a single piece. That should take any stuck shed with it. Keep your humidity up and you shouldn't have any issues. This isn't going to be an overnight recovery, but I'm pretty confident that things will turn out well in the end.
not sure if anyone has said this, but get her an appropriately sized rat.
rats have better nutrition value for ball pythons than mice do.
For now the focus needs to be on getting the snake to eat consistently. Mice vs rat pups don't make a huge difference nutritionally speaking. When dealing with larger rats that might be different but for the time being it's a toss up.
