Well I stand corrected, sorry. You can punch me now. It's nearly midnight here as I'm in another country, so I seriously misread. I didn't even see you mention a thermometer to be honest. I think for some reason when you mentioned probe and uth that your last talk about thermometer translated to thermostat in my head and to even make it worse I'm doing this on my cell phone as I'm trying to sleep.
