Some snakes will eat during shed...many won't. If yours will, it probably won't hurt them, although I've heard about increased risks of regurging. But I know for sure it won't hurt them a bit to skip a meal for a week until the shed is finished. That would be the equivelent of us skipping breakfast because we're not feeling well that morning.
