What is RES?
And how do Beards and Uromastyx compare in terms of ease of care/maintenance?

I think some of the larger lizards may "enjoy" certain human interaction.
I know a few tegus and iguanas who would come up to you on their own wanting to get scratched and just hang out.

RED = Red eared Slider
Uromastyx have basically the same care as beardies except they don't need insects. They are a strict veggie/seed eater. They also generally tend to have much larger personalities. They are silly little things

What do you mean by "larger personalities"?
And Uromastyx look really cool, but are their tails dangerous? (As in like, harmful to the touch, sharp, etc.)

Many species of Varanids enjoy some level of human interaction if boundaries are respected. The animals have to trust the keepers and it takes many years to earn that trust.
Our Savannah Monitor will come up to my hand if I put a fist in the enclosure and he will expect to get rubbed on the neck. If I do not rub his neck then he will rub it on my knuckles.
He does not tolerate being moved very well. He does not hiss or become aggressive but he will start moving until I let him down. This is only once a month for an enclosure cleaning and soak in the tub.
But if you were looking for a species to get into as a pet I wouldn't recommend Varanids first. They are incredibly rewarding to keep but they are more then a handful in every way you could think of (feeding, enclosure size, dedication, etc).

My adult leopard geckos love to hangout with me. They try to crawl at me threw the cage when they want to come out. Or so it seems. When they are out I can set them on the floor away from me and they always come towards me.

I'd say one of my Rufous Beaked Snakes love being handled. I sure as hell know it always harasses me anytime my hand goes in that tank or when I go near it. lol

I have a couple of BPs that enjoy coming out. Out of all my snakes my BRB will hang out with me the longest.
He will hang on my arm forever, even when given the choice to leave me.
