Any change of enclosure can make them nervous.
As can a bigger tank and vibration.
I'd say the snake isn't aggressive so much as feeling unsafe and defensive.
The towel was probably scent driven.
Have you tried heating the mouse up a little more on the head? ( assuming it's F/T ).
