Your snake will poop when it feels like it needs to. I have one who poops every 2 weeks and I have another who poops when he she sheds. As long as the belly isn't firm from an impaction, you're fine. As for urates, you should see those a lot more frequently. Most of mine pass a urate weekly if not twice a week.
Feeding a hopper mouse is fine. You might consider feeding rats if you can get a hold of them. They'll switch a little easier as babies versus as adults. There's nothing wrong with feeding mice, but when they get bigger, you'll have to feed 4-6 mice a feeding vs. one rat.
As for when to hold your snake, try to hold off holding it until it eats 3 consecutive times for you. After than, you can start out with small handling sessions and working your way up to longer sessions. If your snakes happens to stop eating, try not to handle it until it eats consecutively for you.
