Is that a small CC Pet Lagoon? If so, then by comparison she looks large enough to take large adult mice to me. I wouldn't worry too much about the neck thing - it'll always kind of look that way. If you couldn't see a bump at all after she finished her mouse, that's also an indication that it may not be big enough.
Either way, she looks like she is in great body condition and fat and sassy, so even if the medium mice aren't the biggest meal she can take, they'd be more than fine for her for a little while.
